Preheat oven to 180C
In a small bowl, combine yeast and ¾ cup warm water (43C). Too hot and it will kill the yeast! Let sit for 5 minutes to activate. Sprinkle in 1 Tbsp. of the sugar a few minutes in.
In a separate bowl, combine white rice flour, brown rice flour, tapioca flour, Live Longer Organic 100% Cricket Flour, xanthan gum, salt, baking powder, and remaining sugar. Whisk until well combined.
Make a well in the dry mixture and add the yeast mixture. Add the olive oil and additional ½ cup water before stirring. Then stir all together until well combined using a wooden spoon.
Divide the mixture in half.
Lightly coat 2 baking sheets or pizza stones with non-stick spray and place half of the dough down. Put another sheet of baking paper on top and roll with a rolling pin until about 1cm thick. Repeat with the other half of the dough on a separate tray.
Put the pizzas in the oven to pre-bake for roughly 25-30 minutes, or until the crust edges look golden brown.
Remove from oven, add desired toppings and heat in the oven until toppings are cooked.
2 pizzas will yield 16 slices
