Method
In large mixing bowl, whisk together flour, coconut sugar, baking powder and salt.
Add coconut milk, water, oil and vanilla. Stir until just combined, careful to not over mix. Add more water if needed to get a pouring consistency
Heat a large non-stick frying pan over medium-low heat. Coat with cooking spray or brush with coconut oil.
Add 1/4 cup scoop of batter to pan and slightly smooth out to make large pancakes. Flip pancake when bubbles start to appear on the surface.
Alternatively, plop a spoonful of mixture into the pan to make mini pancakes.
Continue to cook on other side. Repeat with remaining pancake batter.
Serve warm with fruit, yoghurt, honey, granola, nuts… the choice is endless!
